LEEK AND POTATO SOUP



I made this soup last night and oh my god I forgot how good it is. No wonder it is my hubby's favourite! It is so velvety and tasty and more than satisfying on a cold winter night. Thank god for leftovers, I am so looking forward to having some more for lunch, my mouth is watering just thinking about it. Yum!
Now for the recipe, it is so easy to make and you will feel like a rockstar after you are done making it. Your family will love you even more!  I'm not kidding it tastes that amazing.

Ingredients:
3 Leeks (sliced)
3 small red skin potatoes (peeled and diced)
3 cups of chicken broth ( or vegetable broth)
1 cup of heavy cream
Salt

Direction:
Sauté the leeks in some olive oil for 1 minute
Add the potatoes, broth and some salt to taste
Bring the broth to a boil and reduce to simmer until the potatoes are fork tender
Blend everything until the soup is creamy
Finish with the heavy cream and give it a big stir
Adjust the seasoning if need be

MISO WONTON SOUP



This recipe is so fast , when I say fast, it is only 5-6 mins max. Three ingredients and you are good to go. This was a quick lunch for us this past week since it was a busy one and right away I knew I had to share it with you guys. It is also great for a quick dinner when you don't really have time to make much of anything.




Ingredients:
1 bag of mini chicken wonton (cooks in 1-2 mins)
1 box of miso broth ( I got mine at Whole foods but if you don't like miso, just do chicken broth)
3 cups of baby spinach
1 sprig of green onion (sliced) for topping

Direction:
Bring the broth to a boil
Reduce the heat to simmer, add the wontons ( the reason I love the mini ones ,they cook in 1-2 mins) Put the lid on, let it cook. (time it if you like)
Once the wontons are cooked, turn the heat off and add the spinach.
Give it a good stir, the spinach will cook with the warm broth.
Serve with some green onions on top.

10 MINS WONTON SOUP


Good morning friends! Today I have a very quick soup for you. Really this takes only 10 mins and that's being generous with the time. With the temperature dropping, all I have is a cup of warm soup that is satisfying but also tasty. This wonton soup is just perfect!

Ingredients:
1 bag of frozen mini chicken wontons
5 cups of chicken broth ( low sodium)
1 cup of rice noodles
1 spring of green onion
3 cups of baby spinach ( or more if you want)
1/4 cup of thai basil
1 cube of veggie cube from Knorr ( Please don't skip this, it adds so much flavour to the soup)
Direction:
Bring the chicken broth to a boil on medium heat, add the rice noodles ( it should take 5 mins to cook)
Then add wonton( they cook in 2 mins)
Take it off the heat, add the baby spinach, give it a good turn and it should wilt in seconds.
Serve it hot top with the green onions and thai basil. ( You can skip the thai basil if you don't like it)

So easy and delicious, you can add some hot sauce if you like.
