All you healthy people out there please avert your eyes, this is no healthy food. It's grease at its best with lots of bacon. I have to say that Cliff and i are pretty healthy eaters but we are both foodies and with that comes splurging on some extremely delicious dishes that are not the healthiest but we are pretty much game for about anything in the food adventure. It's no surprise that when i saw bacon aioli on the menu at a restaurant that we had to have it. But to our dismay, it was flat!!! No bacon flavour came through and as for the aioli, it was so so. I decided to take matters into my own hands and get whisking , the aioli that is..
Aioli is no stranger to me, growing up my mum used to make it all the time and i was right there in the middle helping her. It was an event because of the sheer amount that she would make , turn out my grandfather was an aioli lover too and he was the reason why my mum had to make so much. Good times...
Anyways this recipe takes patience and a good wrist for whisking. I do it the old fashion way, it takes me back to my mums' kitchen but you can just put it in the blender and be done in 5mins.
Ingredients:
1 yolk cooked
1 yolk raw( use a good organic one)
2 tablespoon of bacon drippings
1 teaspoon of whole grain mustard
1 teaspoon of dijon mustard
1 cup of canola oil
1 clove of garlic grated
Put the yolks in a bowl, grate the garlic in, add the mustard.
Start whisking by adding the bacon drippings very slowly and then the oil, keep whisking until you have a nice and smooth consistency.
This so good in ham sandwich, steak, chicken,burgers, everything really. But tonight this is going on a nice burger.
