MUSHROOM AND YELLOW SQUASH QUICHE









This title is such a tongue twister for me. Try saying it 3 times in a row. Haha. I love making quiches, i make all kinds and they are so easy to put together. It really is like assembling your food. The recipe is so easy and you can make it your own.

Ingredients:
1 pie crust ( store bought)
2 yellow squashes
1/2 cup of  cooked mushrooms
5 egg whites
1/2 cup of milk ( 2%)
1 cup of parmesan cheese and cheddar( I had a tiny bit)
1/4 cup of mozzarella shredded


Slice the squashes and line them on the bottom of the pie crust, add the cooked mushroom.

In a separate bowl, add the egg whites, salt and pepper, add 2 tbs of green onion sliced. Add the milk and half the cheese and whisk it all.
( I added some flax seed and chia seed for a healthier spin on things.If you have kids or picky eaters, i suggest putting the squash and any other veggies in the food processor so they don't know what's in it. It works well when i have some picky eaters on my hand)
Pour it over the squash and mushroom, Top with both cheeses. bake at 350 for 60 mins.
