CHICKEN NOODLE SOUP

Hello Friends! How was your weekend? Mine was full of medication. The hubby and I have been sick, I have recovered but my lovely husband has it bad. I don't ever really recall him being sick like that. So yesterday, chicken noodle soup was  on the menu. I tell ya! Chicken soup has good healing powers. It's comfort food for the body and the soul and so easy to make.




Ingredients:
2 chicken breasts diced
1lb of carrots diced
5 stalks of celery diced
1 onion diced
3 cloves of garlic diced
2 cups of cheese tortellini
2 boxes of chicken broth
Salt and pepper to taste
Bag of baby spinach

Direction:
 Sauté the onion in some olive oil until transparent.
Add the veggies, salt and pepper them. Let it cook for 3 mins and then add the garlic.
Add the broth and simmer the whole thing for 30 mins or until the carrots are soft.
Salt and pepper the chicken and drop them in the broth. Let it cook for 5 mins
Drop the tortellini. They will float when they are done.
I add the spinach to the soup off the heat.

I like to add some parmesan cheese before I eat it ( also a squeeze of lemon for when I'm sick)
