LENTIL SOUP
This is one of my favourite soup of all time and I have to say that I make it all the time. I have always loved Lentil soup, my mum makes one with ginger in it and it is delicious. But I have turned mine italian, I usually add italian sausage in it but I did skip it this time around. It is so easy to make, I hope that you enjoy this recipe!
Ingredients:
2 cups of dry lentils
1 diced onion
2 cloves of diced garlic
4 carrots diced
4 fresh tomatoes diced
1 tablespoon of fennel seed
4 cups of chicken broth
Sauté the onions in some olive oil until translucent, add the fennel seed and the garlic, sauté for another 1 minute.
Add the carrots, salt and pepper to taste. Let cook for 3 minutes
Add the diced tomatoes.
Give it a good stir and add the chicken broth.
Bring to a boil and let it simmer for 40 mins.
You will know the lentils are ready when they are soft.
***IF YOU WANT TO ADD ITALIAN SAUSAGE, COOK THEM FIRST. THEN ADD THE ONIONS TO THEM AND FOLLOW THE REST OF THE RECIPE.
I love it with garlic bread and top with some parmesan cheese.
