WHAT'S FOR DINNER!



This past sunday called for comfort food, you know the kind that sticks to your ribs and makes you want to fall asleep on the couch. To me, nothing says comfort like a bowl of pasta and this is what was the menu. I still wanted to keep things simple by making this a vegetarian meal that was equally delicious. I love this dish, It has a bite to it with the pepper but It's really delicious and it will make you come back for seconds. The best part of this meal is that it's done under 20 mins.

Ingredients:

2 Red bell peppers
2 cloves of garlic
1/4 cup of sour cream
1 small thai pepper
1 can of corn
1/2 box of Thin Spaghetti
Salt and Pepper
1 cup of vegetable broth

Direction:

Roast the bell peppers on top of the stove.
Cut the bell peppers and keep the skin on them
Cut the garlic gloves.
Put the bell peppers, garlic, thai pepper and 1cup of broth in the food processor ( blend it up until It's smooth)
Cook the pasta according to the box.
Pour the sauce in a pot ,add the sour cream
Add salt and pepper and give it a stir
Add the cooked pasta and the corn
 Top with some cheddar cheese
It's ready to serve.

I served it with some spinach in the bottom of the bowl.
