WHAT'S FOR DINNER






I know that I have been on  a pasta kick lately but I can't help it, it's so good. I always feel like when in doubt, cook some pasta and throw whatever it is that you have in it. So this pasta is no different. With my hubby's new schedule, time seems to fly by and I have to be quick on my feet with meals. So I made this pasta on Saturday in a hurry, it was quick, healthy and delicious.

Pasta with corn cream sauce

Ingredients:
1 can of corn (drained and rinsed)
1/2 box of pasta
1/2 cup of parmesan cheese
1 cup of milk (I used 2%)
1 bag of baby spinach
2 sprigs of green onion( diced)

Direction:
 Cook the pasta according to direction
In a food processor, put in the corn, milk, salt and pepper
Blend everything until it's smooth
Add the sauce, spinach and pasta.
Give it a good stir until the spinach is wilted
Add the cheese and the green onion
