BIRTHDAY CAKE



I wanted to share this fun chocolate cake. The recipe is so easy, no box mix here! The cake was so moist, I made a cream cheese frosting to go with it. 

Cake recipe:
1 3/4 cup of unbleached flour
3/4 cup of cocoa powder
1 3/4 cup of sugar
2 tsp of baking soda
1 tsp of baking powder
2 extra large eggs
2 tsp of vanilla extract
1 cup of buttermilk
1 cup of expresso( freshly brewed)

Direction: Mix all the dry ingredients in a bowl, do the same thing with all the wet ingredients. Slowly incorporate them together. This will be a very loose batter but don't be nervous, this is how it's suppose to be. Preheat your oven at 350 and bake for 30-45 mins.
Let it cool completely before you put any icing on it.

Icing recipe:
1 stick of butter softened
1 package of cream cheese softened
1/2 pound of confection sugar (but you can add more if you want it sweeter)
2 tsp of vanilla extract
Mix everything up until it's nice and smooth.
Frost away!

As for the dots on the cake, it couldn't be easier. They are sugar sheets that you can get anywhere really. I got mine at Walmart! I know, I couldn't believe it! Cut it to whatever shape or size you want. I wanted to have dots. I have to give my wonderful husband credit for this one. He was the one who patiently cut all the dots and I just placed it on the cake( I know my job was the hardest one, haha, just kidding!) I have to say that I was beyond pleased at how adorable this cake looked.
