PROSCIUTTO WRAPPED HALIBUT

This weekend we finally hit the grocery store for some much needed groceries. Can I just say how nice it feels to be organised, have food around the house and make real meals. Anyway I digress, I wanted to make something easy but equally delicious. This is perfect for company or just for your family, you can of course substitute the halibut for any other fish you like or may be something that's on sale that day.

Ingredients:
2 Halibut fillets ( 6 oz each)
Salt and pepper
2 slices of prosciutto
1 tablespoon of butter
1 tablespoon of olive oil
Pesto (I used the jar one)

Direction:

Season the fish on both sides with salt and pepper
Wrap it with the prosciutto
Melt the butter with olive oil in a sauté pan
Place the fish in the pan and sear both sides
Then bake in the oven at 425 degrees for 10-15 mins
I topped it with some pesto.
