I love spring rolls and they are so fresh, so appropriate when the weather starts to warm up. This really is a no-recipe recipe if you know what I mean more like an assembly line. You can literally put anything in there and it would taste fantastic. I think of it as the kitchen sink of wraps.
Ingredients:
Rice paper
Grilled chicken tenders
Carrots ribbons ( I used my veggie peeler)
Rice noodle softened
Cilantro
Mint leaves
Mixed greens lettuce
Spicy Peanut Sauce:
1 tablespoon of smooth peanut butter
1 teaspoon of soy sauce
Juice of 1 lime
1 tablespoon of sriracha
2 tablespoons of warm water
Mix it well until smooth but heads up it's very spicy
First pour some boiling water over the dry rice noodle, let it stand for 10 mins until they are soft. Drain the water.
Dip the rice paper in warm water until they are soft and transparent like the picture above. You can start filling it up with all the ingredients. On some of them, I put the mixed green lettuce instead of the rice noodle. Lastly wrap them like a burrito.
Don't forget to enjoy them with the spicy peanut sauce, I have to admit that I forgot the take a picture of the sauce with the spring rolls because Cliff and I were busy eating them :)
