BLUEBERRY OATMEAL PANCAKE WITH MEYER LEMON GLAZE

For the past couple of days I have had pancakes on my mind. It could be because I have not made pancakes for years, really years! I always go for crepes because, well, this is what I grew up having. I really wanted to make a really nice pancake that would still be healthy but feel like I'm indulging. Boy this pancake hit all those marks. It is very easy to make, healthy and so good. As for the meyer lemon glaze, it's one of the ways I use my batch of meyer lemon curd.

Ingredients:
1/2 cup of organic plain quick cooking oats ( no sugar)
3/4 cup of all purpose flour
1 teaspoon of baking powder
2 tablespoons of flaxseed
2 tablespoons of Chia seed
1 tablespoon of sugar
1 cup of blueberries ( I used frozen ones and let it thaw)
Zest of a whole Meyer lemon
Juice of a Meyer lemon
1 egg
1 tablespoon of melted butter
1/2 cup of 2% milk

Meyer Lemon Glaze:
2 tablespoons of Meyer lemon curd
2 tablespoons of water
Mix it well



Direction:

In a food processor, put all the dry ingredients.



Then add the lemon zest to it and give it a good blitz.




Until it looks like this! 


Add the egg, the milk, meyer lemon juice and the melted butter


In a pan, melt a  1/4 tablespoon of butter and start making some pancakes.



Place some blueberries in the batter and wait until you start seeing little bubbles and you know it is time to flip it.



 I love it when the pancakes is nice and golden brown.




Enjoy with the glaze!
