Hi everyone! I hope that your long weekend was wonderful. We had such an amazing time, just the two of us enjoying our first long weekend in a while. Rest can be good for the soul, don't you agree? Well on one of those days, when we got home, there was a big bag full of tomatoes by my front door. I knew immediately that it was from my sweet neighbour. So that night I decided to make a simple tomato sauce, you know to really make the tomato shine. Also this is a very easy recipe, more like dump everything in and let it cook!
Ingredients:
2 lbs of tomatoes
2 tablespoons of pesto
1 tablespoon of hot pepper spread ( you can skip it if you don't like spicy)
1 teaspoon of garlic powder
2 teaspoons of onion powder
1 cup of fresh basil
1 teaspoon of dried oregano
1/4 cup of ketchup
1 tablespoon of olive oil
Salt and pepper to taste
Direction:
No need to warm a pot before hand for this recipe, just do a rough cut for the tomatoes and dump the rest of the ingredients in. Make sure you get all the juices from the tomatoes in the pot. Give it a big mix. Turn the heat on medium and when it hurts to boil, put the lid on and lower the heat to simmer for 30 mins.
It should look like the picture above, luscious and rustic. I love the sight of this tomato sauce. Toss in some pasta and topped with loads of parmesan cheese and dinner is served!
