GREEK SALAD



This salad is one of the first thing I made when we came back from Miami. I needed to go to grocery shopping because let's face it my fridge was empty. So I wanted to make something that was easy and healthy since we did chow down on  a lot of food in Miami. Ha!
So I stopped by the Olive bar while grocery shopping and picked everything I wanted in my salad. So it would be a very easy assembly when I get home.

Ingredients:
12 kalamata Olives
6 Green Olive stuffed with feta cheese
4 Artichokes hearts
Marinated Feta cheese in Lemon, garlic and olive oil (make sure you get some of that marinade, it will be the dressing)
cherry Tomatoes
English cucumber
Baby Spinach
Baby kale
Grilled Chicken breast

Direction:
1) Put some salt, pepper and dried oregano on the chicken breast on both sides.
2) Grilled for 5 mins on each side
3) Cool it and diced
4) In a big bowl, add the spinach, kale, diced artichokes hearts, diced cucumbers,tomatoes, olives and feta.
5) Use the oil that the marinated feta was sitting in to dress the salad
6) Top the salad with some Chicken and enjoy!
