CREAMY CHICKEN POT PIE


Hello everyone! As promised I am back with this very easy recipe. I wanted to make sure I share it before the weather starts to warm up. I love this recipe so much, it is absolutely delicious and a bit different from the average chicken pot pie. I make a béchamel sauce instead of a gravy.  For the biscuits, I used this recipe. I promise you that this is so easy to make and with the help of a store-bought rotisserie chicken, it's a win-win. I really hope that you make this very soon.

Ingredients:
3 cups of shredded rotisserie chicken
4 carrots (sliced)
2 stalks of celery (sliced)
2 medium red potatoes (cubed)
1 medium size onion (diced)
2 cloves of garlic (diced)
1/2 cup of frozen peas
 2 tablespoons of flour
2 tablespoons of cream cheese ( chives and onion)
2 cups of milk
1/4 cup of shredded sharp cheddar
Salt and pepper

Direction:

  1. In a pan, add 1 tablespoon of olive oil, add the onion, celery, carrots , garlic and potatoes. 
  2. Add some salt and pepper, give it a stir. Put the lid on it and let it cook until the potatoes and carrots are just tender. Takes about 5 mins.
  3. Sprinkle the flour, give it a stir and add 2 cups of milk ( I use 2%)
  4. When the milk starts to bubble and thicken, add the cream cheese and cheddar. Take it off the heat, give it a good stir until everything is mixed properly. 
  5. Taste it to see if you need more salt and pepper.
  6. Add the chicken and the peas. Mix it all well and serve!
