Hello everyone! As promised I am back with this very easy recipe. I wanted to make sure I share it before the weather starts to warm up. I love this recipe so much, it is absolutely delicious and a bit different from the average chicken pot pie. I make a béchamel sauce instead of a gravy. For the biscuits, I used this recipe. I promise you that this is so easy to make and with the help of a store-bought rotisserie chicken, it's a win-win. I really hope that you make this very soon.
Ingredients:
3 cups of shredded rotisserie chicken
4 carrots (sliced)
2 stalks of celery (sliced)
2 medium red potatoes (cubed)
1 medium size onion (diced)
2 cloves of garlic (diced)
1/2 cup of frozen peas
2 tablespoons of flour
2 tablespoons of cream cheese ( chives and onion)
2 cups of milk
1/4 cup of shredded sharp cheddar
Salt and pepper
Direction:
- In a pan, add 1 tablespoon of olive oil, add the onion, celery, carrots , garlic and potatoes.
- Add some salt and pepper, give it a stir. Put the lid on it and let it cook until the potatoes and carrots are just tender. Takes about 5 mins.
- Sprinkle the flour, give it a stir and add 2 cups of milk ( I use 2%)
- When the milk starts to bubble and thicken, add the cream cheese and cheddar. Take it off the heat, give it a good stir until everything is mixed properly.
- Taste it to see if you need more salt and pepper.
- Add the chicken and the peas. Mix it all well and serve!
