TALES OF A ROAST CHICKEN

This past weekend, Cliff and I ventured to Costco to get some things. We don't go there very often, the last time we went was last year. So I decided to grab a roast chicken from there, I love their chicken. It is huge though for 2 people and I knew that this guy was going to turn into different meals throughout the week.

MEAL 1:

The first night, we had it with a nice kale salad and some toasted ciabatta bread. It was so good! After that meal, I realised that I did miss that chicken. Haha

MEAL 2:

Chicken Pot Pie

Now if you have never had homemade Chicken Pot Pie, please do! It is so simple, tasty and amazing. I made sure I made a lot so we can have lots of leftovers. I do my chicken pot pie differently, I make homemade biscuits with it and serve it on the side. I will post the recipe next week! Just looking at it, is making me hungry. Yum!

MEAL 3:

Chicken Enchiladas with Salsa Verde

I had not made enchiladas in a couple of years and I know that my lovely hubby has been craving them  and so have I.  I used this recipe and I love it. I am so sorry for the iphone picture, it really does not do this delicious dish justice. We were in a hurry to gobble it up and forgot to take a nice picture. This is also very easy to make and the game changer in this dish is to make your own tomatillo salsa, it really transforms it and packs so much flavour.

I still have some chicken left and tomorrow it will be chicken salad sandwich with avocado. I hope that this helps you to figure out what to do with store-bought roast chicken. It is such a help especially if you have a busy lifestyle. I know there are so many more amazing recipes to do with it but that will have to wait until next time. Have a lovely day everyone!
