I know what you are thinking, "Soup!? But it's spring!" I felt the same way, I couldn't get away from comfort food fast enough when it was finally spring, I dreamt of grilled, light, fresh and warm weather food preferably while wearing flip-flops when enjoying all of that. ;)
This soup turned me around, really! It is so fresh and yet satisfying, you can have it warm or room temperature. I love it warm and the best part is that it takes about 20 mins or less to make which means more time outside with the family if you are having great weather right now. Can I just say that it is still cold around here, I guess flip-flops are going to have to wait a little longer so for now I will be enjoying this soup a little longer. I hope that you get to try this recipe this weekend!
Ingredients:
1 fennel bulb diced
1 teaspoon of fennel seed
1 small onion diced
1 clove of garlic diced
8 oz bag of peas
2 cups of spinach
3 cups of chicken broth
4 tablespoons of heavy cream (optional)
salt and pepper
In a pot, add a teaspoon of olive oil, add the fennel seed and let it sit for a couple of seconds.
Add the onion, fennel, salt and sauté until they are soft.
Add the garlic, spinach and peas
Let the peas and spinach wilt a little bit
Add the chicken/ veggie broth and put the lid on and let it cook for 5 mins.
Then transfer the veggies in the food processor and blend everything
Add 2-4 tablespoons of heavy cream, now this step is optional but just a little of cream goes a long way and makes this so rich and delicious
Stir and serve!
