Avocado toasts are one of my go-to for breakfast, lunch and dinner. Originally this was not meant for the blog, I was trying to get a quick lunch together for cliff and I since he has been working from home a lot. I knew that it was going to be avocado toast, something quick but I really wanted to add a little something to it than the regular topping I see around. So I made a chorizo sauce with fresh cherry tomatoes. I had some soy chorizo on hand that I needed to use but a regular one would be as amazing. I hope that you had a wonderful weekend, we were knee-deep into outdoor renovation and still have a lot to do. I should definitely post some pictures on instagram .
Ingredients:
3 eggs
1 cup of fresh cherry tomatoes (halved)
1 clove of garlic (diced)
1 small shallot (diced)
1 tablespoon of ketchup
1/4 cup of sliced chorizo
1/4 cup of water
Salt & pepper
cilantro and green onion for garnish
Whole wheat bread slices
Direction:
- In a warm pan, add 1 tablespoon of olive oil
- Add the chorizo, let it brown for a minute or two
- Add the shallot, garlic. Cook for a minute
- Add the tomatoes with a pinch of salt, the ketchup and water
- Put the lid on and let it cook for 2 minutes until it is nice and thick
- Reduce the heat to simmer, add the 3 eggs
- Put the lid back on and let it cook until your desired doneness
- Toast the bread, spread the avocado on
- Top with the egg and sauce
- Finish with the herbs
