ROASTED CARROTS


Every weekend when I go to the farmer's market, I let the veggies guide me into what I will be making through the week. I love this season where there are rainbow carrots everywhere and they look so pretty and delicious.  I think that carrots are such an underrated vegetable , wouldn't you agree? They are never the star of the plate always a sidekick. I really wanted to change that in this recipe and of course it is so easy to make.

Ingredients:
1 bunch of rainbow carrots
1 tablespoon of parsley
2 tablespoons of crumbled feta
Salt & pepper
Olive oil

Direction:
Preheat the oven to 400 degrees.
Peel the carrots
Add salt & pepper and 1 tablespoon of olive oil
Roasted them for 20 mins
When they are done, top with parsley and feta ( you can add more feta if you like)

We had this with a side salad and some garlic bread, it was delicious!
