POLENTA WITH ITALIAN SAUSAGE RAGOUT


I love being able to buy corn during the summer, they are so good and sweet and you bet it is on my grocery list every week. So this weekend, I made something that would normally be comfort food if eaten with pasta but added polenta instead. I made a simple italian sausage ragout and added some grilled corn to my  polenta recipe. It is so easy and fresh and light but so satisfying.

Italian sausage ragout:

1 small onion diced
2 cloves of garlic diced
1 rib of celery diced
1 carrot diced
2 cups of greens
1 lb of spicy italian sausage
1 jar of marinara sauce
1/4 cup of red wine
1 teaspoon of italian seasoning
2 sprigs of fresh basil

Direction:

  • In a pan, sauté the italian sausage until they are brown
  • Add the onion, celery and carrots, italian seasoning, salt and pepper to taste
  • Let it cook for 2 mins
  • Add the garlic and the wine, give it a stir and let the wine cook for 2 mins
  • Add the marinara sauce, add a little more salt, reduce the heat and put the lid on and let it simmer for 30 mins
  • After 30 mins, add the greens, stir it in until they wilt
  • Add the chopped basil in and serve over the polenta
  • Don't forget to top it with some parmesan cheese
