I made this soup last night and oh my god I forgot how good it is. No wonder it is my hubby's favourite! It is so velvety and tasty and more than satisfying on a cold winter night. Thank god for leftovers, I am so looking forward to having some more for lunch, my mouth is watering just thinking about it. Yum!
Now for the recipe, it is so easy to make and you will feel like a rockstar after you are done making it. Your family will love you even more! I'm not kidding it tastes that amazing.
Ingredients:
3 Leeks (sliced)
3 small red skin potatoes (peeled and diced)
3 cups of chicken broth ( or vegetable broth)
1 cup of heavy cream
Salt
Direction:
Sauté the leeks in some olive oil for 1 minute
Add the potatoes, broth and some salt to taste
Bring the broth to a boil and reduce to simmer until the potatoes are fork tender
Blend everything until the soup is creamy
Finish with the heavy cream and give it a big stir
Adjust the seasoning if need be
