Hi everyone! I figured I should try to post the meal planning on sunday to give you an idea if you are going out to the grocery store. This week unfortunately I might repeat 2 days from last week since I wasn't able to cook what I planned. Cliff had a work dinner on one day and got home really late 2 other days. So one day it was breakfast for dinner and the 2 other days we had lasagna. Let me say that making lasagna for 2 people is a bit tricky unless you don't mind eating it for 2 other meals. So I still have veggies that didn't get used that I need to use ASAP. 😁
MONDAY
Breakfast: Oatmeal & apples
Lunch: Kale Salad
Dinner: Veggie and Barley soup
TUESDAY
Breakfast: Mango and orange smoothie
Lunch: Leftover soup
Dinner: Oregano Chicken, Baked sweet potato with green beans
WEDNESDAY
Breakfast: Granola
Lunch: Chicken salad from leftover chicken
Dinner: Butternut Squash Soup
THURSDAY
Breakfast: Oatmeal and blueberries
Lunch: Leftover soup
Dinner: Pan Seared fish with soy & sauté snap peas
FRIDAY
Breakfast: Granola
Lunch: Falafel wrap with yogurt dressing
Dinner: Sweet potato and black bean chili
