BAKED TOMATO AND SQUASH



I have to say that I love a good veg night and I love it even more when it's a one dish meal with minimum prep. You can just pop it in the oven and let it cook and enjoy it with a nice salad. This is how we ate it.

Ingredients:
2 yellow squashes
6 compari tomatoes
3 tablespoons of pesto
salt and pepper

For the topping:
1 cup of panko breadcrumb
1 teaspoon of garlic powder
2 tablespoons of parmesan cheese grated
1/4 cup of grated mozzarella

Direction:
Slice the squashes
Quarter the tomatoes
Place the veggies in a baking dish
Salt and pepper everything
Add the pesto and give it a good toss
Lastly put the topping on the veggies
Cube 1 tablespoon of butter and put it all over the topping
Bake at 350 for 55 mins
