MEYER LEMON COOKIES

This is the last recipe of my meyer lemon week. I really wanted to end the week on a sweet note. I know that there are so many other things I would have loved to make but I will have to wait  for round two when I come across those babies again. Now let's talk about this cookie, it's so fresh and really delectable ( in my humble opinion) and honestly there isn't a cookie that I have met and not loved! This cookie dough is sitting in my freezer now, so whenever I feel a need to sink my teeth into some, I can just toss some in the oven.

Ingredients:
3 sticks of butter ( room temperature)
3/4 cup of sugar
2 teaspoons of vanilla extract
1 pinch of salt
zest of 4 meyer lemon 
3 cups of flour

Direction:

Put the sugar and zest in the food processor and blend it.


In a bowl, put the lemon zest sugar mixture to the butter with the vanilla and salt and give it a good whisk.


Lastly add the flour and the dough should look like the picture above

Shape the dough into a log. Wrap it in a plastic wrap and let it rest for 30 mins in the fridge or you can just freeze them to a later use.


Bake them at 350 for about 20-25 mins depending on the thickness of the cookies.
