So my meyer lemon story continues with this delicious marinade. I mean I have made many marinades but this one will blow your socks off. It is like an explosion in your mouth and of course it is because of that lemon. The good news is that you make this marinade in the food processor and blitz a couple of times and you are done. Very easy, healthy and so good.
Ingredients:
7 meyer lemons
Zest only 4 lemons for this recipe
1 big white onion
4 cloves of garlic
2 tablespoons of rosemary
1 tablespoon of whole grain mustard
2 tablespoons of creamy mustard ( I used maille mustard)
salt and pepper to taste
1/4 cup of extra virgin olive oil
Direction:
Juice all 7 lemons( makes 1 cup of juice), add the zest, onion, garlic and add the rest of the ingredients in the food processor and let her rip. This marinade is good for 6 lbs of chicken.
You can also keep it in a mason jar for about 2 weeks. I don't have a picture of the grilled chicken because as soon as we took it off the grill, the chicken was gone. It was too good.
