MEATBALL SANDWICHES


Happy friday friends! I wanted to end this week this a great recipe. Something that may be you can try to make this weekend with your family. I remember the first ever meatball I made was when my hubby and I were still dating. I made those tennis ball size meatball, he was thrilled. He said that they were the biggest meatball he has ever seen and thought that they tasted delicious.  I have to be honest and say that they were ok. Now almost 10 years later, I have to say that I have changed my meatball recipe numerous times, played around with it and finally found something that is both easy and equally delicious. Did I say that they are really quick to make? Well they are.

Ingredients:
1/2 lbs of ground strip
1 whole egg
1/2 small onion diced
2 tablespoons of chopped parsley
2 tablespoons of chopped basil
1 clove of garlic (grated)
2 tablespoons of pesto
1/4 cup of panko breadcrumb
1/4 parmesan cheese (grated)
Salt and pepper to taste
Handful of italian 6 cheese blend to top the meatballs

Direction:
Mix it all together and start shaping the meatballs. If you don't want to cook them right away, they freeze beautifully. I do it all the time.


Bake them at 350 for 15 mins, I do make smaller ones, but if you want them bigger, just let them cook a little longer. You will know when they are done, the house will smell so good and they will look like the picture below. Yum!


Next is placing them in a pan, adding some marinara sauce and a drizzle of beef broth on top on them. I don't want them with too much sauce but you can add however much you like. let it simmer for 5 mins.



Top it with some cheese and you are ready to make your sandwiches
