AVOCADO BLT

When I think of Las Vegas, all I think of is avocado blt. We ate so many of those there that it should be illegal. Ha! I really don't know why I didn't make them earlier, it is so easy. Just assembling really but still really good, sometimes the simplest things are really the best. Cliff has been begging for me to make these sammies and I was so happy I did. Let's just pretend that all that avocado in there makes it healthier ;)



Ingredients:
Bacon ( whatever amount you want ;)
1 tomato (sliced)
mayo
lettuce
whole wheat bread
Avocado (sliced)

Just assemble ;) I can' t stop winking guys, sorry! I love this sandwich so much

MEATBALL SANDWICHES


Happy friday friends! I wanted to end this week this a great recipe. Something that may be you can try to make this weekend with your family. I remember the first ever meatball I made was when my hubby and I were still dating. I made those tennis ball size meatball, he was thrilled. He said that they were the biggest meatball he has ever seen and thought that they tasted delicious.  I have to be honest and say that they were ok. Now almost 10 years later, I have to say that I have changed my meatball recipe numerous times, played around with it and finally found something that is both easy and equally delicious. Did I say that they are really quick to make? Well they are.

Ingredients:
1/2 lbs of ground strip
1 whole egg
1/2 small onion diced
2 tablespoons of chopped parsley
2 tablespoons of chopped basil
1 clove of garlic (grated)
2 tablespoons of pesto
1/4 cup of panko breadcrumb
1/4 parmesan cheese (grated)
Salt and pepper to taste
Handful of italian 6 cheese blend to top the meatballs

Direction:
Mix it all together and start shaping the meatballs. If you don't want to cook them right away, they freeze beautifully. I do it all the time.


Bake them at 350 for 15 mins, I do make smaller ones, but if you want them bigger, just let them cook a little longer. You will know when they are done, the house will smell so good and they will look like the picture below. Yum!


Next is placing them in a pan, adding some marinara sauce and a drizzle of beef broth on top on them. I don't want them with too much sauce but you can add however much you like. let it simmer for 5 mins.



Top it with some cheese and you are ready to make your sandwiches
